Yam Biscuits
- INGREDIENTS
- 1 large yam, cooked and mashed (1+1/2-2cup)
- 4 tbsp coconut milk
- 6 eggs, pasture raised
- 1/2 coconut oil, melted
- 1 cup almond flour
- 4 tbsp coconut flour
- 1/2 tsp Himalayan salt
- 2 tsp baking powder, aluminum free
- 1 tbsp fresh thyme, chopped
- DIRECTIONS
- Preheat oven to 350F
- Place all yam, coconut milk and eggs in a large bowl and combine
- In a seperate bowl combine flours, salt and baking powder, mixing to ensure no lumps
- Add dry ingredients to wet stirring with a spoon to blend
- Add coconut oil and thyme
- With a "muffin" scooper or a generous tablespoon make 12 (ish) mounds of dough on parchment paper lined baking sheet
- Bake for 25-30 minutes, until starting to brown and firm to touch
- ENJOY!! And they freeze well
