Orange Chicken on Zucchini Noodles



  • 2 lbs boneless skinless chicken thighs
  • 1 tbsp coconut oil
  • 1/2 cup fresh squeezed orange juice
  • zest of 1 large orange
  • 2 tbsp Braggs
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp raw honey
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • 2 small zucchinis, organic
  • Place orange juice, zest, braggs, olive oil, garlic and honey in a bowl, mix well and set aside
  • Heat coconut oil over medium heat in large pan
  • Season chicken with salt, pepper and onion powder
  • Add chicken to hot pan, let brown on all sides (stirring a bit) until almost done, about 5 minutes
  • Add sauce to pan and stir, turn to medium and let simmer uncovered until sauce thickens a bit, about 5 minutes
  • Serve over zucchini noodles (peel strands of zucchini and very lightly saute in coconut oil or steam)
