Orange Chicken on Zucchini Noodles
- INGREDIENTS
- 2 lbs boneless skinless chicken thighs
- 1 tbsp coconut oil
- 1/2 cup fresh squeezed orange juice
- zest of 1 large orange
- 2 tbsp Braggs
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp raw honey
- 1/2 tsp onion powder
- salt and pepper to taste
- 2 small zucchinis, organic
- DIRECTIONS
- Place orange juice, zest, braggs, olive oil, garlic and honey in a bowl, mix well and set aside
- Heat coconut oil over medium heat in large pan
- Season chicken with salt, pepper and onion powder
- Add chicken to hot pan, let brown on all sides (stirring a bit) until almost done, about 5 minutes
- Add sauce to pan and stir, turn to medium and let simmer uncovered until sauce thickens a bit, about 5 minutes
- Serve over zucchini noodles (peel strands of zucchini and very lightly saute in coconut oil or steam)
