Asparagus Devilled Eggs



  • 2 hard boiled eggs (pastured eggs ideally)
  • 1 - 2 fresh asparagus spears, chopped (lightly cooked - optional)
  • a few thin slices red onion (optional)
  • 1 tbsp Dijon mustard
  • 1/4 tsp Himalayan salt
  • Allow eggs to cool completely. Once cooled gently removed shells and slice each in half.
  • Removed yolks gently and set whites aside
  • Mix yolks, asparagus, onion, mustard and salt together either by hand or in food processor - depending on consistency desired
  • Fill whites with yolk and asparagus mixture.
  • Enjoy immediately or make a bigger batch for sharing.
