Asparagus Devilled Eggs
- INGREDIENTS
- 2 hard boiled eggs (pastured eggs ideally)
- 1 - 2 fresh asparagus spears, chopped (lightly cooked - optional)
- a few thin slices red onion (optional)
- 1 tbsp Dijon mustard
- 1/4 tsp Himalayan salt
- DIRECTIONS
- Allow eggs to cool completely. Once cooled gently removed shells and slice each in half.
- Removed yolks gently and set whites aside
- Mix yolks, asparagus, onion, mustard and salt together either by hand or in food processor - depending on consistency desired
- Fill whites with yolk and asparagus mixture.
- Enjoy immediately or make a bigger batch for sharing.
