Cauliflower Crust Pizza
We load ours up with chicken, mushrooms, olives, spinach, red onions, peppers, tomatoes, feta cheese...pretty much everything!
I see this as a new staple meal in our pizza loving home so lots of chances to experiment.
- INGREDIENTS
- 1 small head cauliflower
- 1 clove garlic
- 1/2 cup cheese (I used a blend of mozza, parmesan and 2 year aged cheddar)
- 1 egg, beaten
- 1 tsp basil
- 1 tsp oregano
- Your favorite pizza toppings
- DIRECTIONS
- Preheat oven to 400F
- Process cauliflower in food processor until it begins to resemble rice
- Saute cauliflower in coconut oil or cast iron over medium heat until it starts to look translucent (6-8mins)
- Combine cauliflower with all ingredients
- Spread your dough out onto pizza pan lined with parchement paper (about 1/4 inch thickness)
- Bake in pre heated oven for 30 - 40 minutes or until it is golden, edges will be crispy and darker
- Remove and let cool for a few minutes
- Top with your favorite toppings (pre cook "watery" veggies ie. mushrooms, spinach, onions)
- Broil on high for about 5 minutes or until cheese is melted
- Let cool for a few minutes before cutting
- ENJOY!!!
