INGREDIENTS
- 1 Medium celery root
- 1 Tbsp Coconut-Ghee (or coconut oil or grass-fed butter)
- Himalayan salt to taste
- DIRECTIONS
- Wash and peel celery root (peel can be saved for making broth :))
- Shred/grate celery root using food processor or grater
- Heat oil over medium heat (I love my cast iron pan for these)
- Cover pan with grated celery root and cook for about 5 minutes before stirring.
- Mix celery root around pan, cooking for another 5 minutes or so
- Cook until golden brown, sprinkle with salt and serve.
