- INGREDIENTS
- 1 Head organic green or red leaf lettuce, washed and chopped
- 1 Large organic red pepper, cut into salad chunks
- 1 Large organic yellow pepper, cut into salad chunks
- 1/2 Small red onion, finely sliced
- 8 large dates, pitted and chopped
- 1/2 Cup Homemade black bean hummus
- 1/2 Cup Organic salsa
- 2 Large tomatoes, chopped
- 1 Large avocado, quartered
- 1/2 cup 2 year old aged organic cheddar cheese, small cubed or shredded
- 12 - 15 Beanitos broken (our newest exciting discovery...crunchy chips made from black beans)
- 1 pound GRASS FED ground beef, cooked and taco seasoned
- DIRECTIONS
- Saute beef until cooked and season with homemade taco seasoning**
- Place greens, peppers, onion and dates in large salad bowl
- In small bowl mix together salsa and hummus
- Top salad with salsa/hummus mixture and toss until nicely coated
- Dish salad onto 4 dinner plates and top evenly with remaining ingredients

**Homemade taco seasoning - 1tbsp chili powder, 1tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp dried oregano, 1 1/2 ground cumin, 1/2 tsp Himalayan salt
