Chicken Salad Garden Lettuce Wraps
- INGREDIENTS
- 1 cup cooked chicken, chopped
- 1 - 2 ribs celery, finely chopped
- 1 tbsp finely chopped red onion
- 5 or so pea pods, shelled
- 1/4 tsp Himalayan salt
- 1 tbsp homemade mayonnaise
- 4 large pieces garden fresh or butter lettuce
- 1 small tomato, sliced
- 1/2 small avocado, sliced
- a small handful lemon basil, chopped
- DIRECTIONS
- Mix together all ingredients except lettuce, tomato, avocado and basil
- Layer 2 pieces of lettuce together to make 2 sturdy wraps (4 pieces lettuce = 2 wraps)
- Place tomato and avocado slices along the middle of your wraps
- Top each wrap with half your chicken salad mixture
- Sprinkle with lemon basil
