4 Large eggs, pasteured
1 small avocado, ripe
1/2 cup coconut oil, unrefined
1/2 cup honey, raw
1/2 tsp Himalayan salt
1 tsp vanilla
1 Tbsp brewed coffee, organic
4 Tbsp cacao powder, raw
1/2 cup cacao nibs
1/2 cup coconut flour


Preheat oven to 350F

Beat the eggs a lot (use a hand blender). You want to fluff the eggs up as much as possible
Add in the avocado and blend until smooth
Add in oil, honey, salt, vanilla, cacao powder, cacao nibs and blend until smooth
Slowly add in coconut flour aiming to create a "batter" like consistency (as opposed to dough)
Bake for 20 minutes (bottoms should be slightly browned)
