Yam Biscuits

 

 

  • INGREDIENTS
  • 1 large yam, cooked and mashed (1+1/2-2cup)
  • 4 tbsp coconut milk
  • 6 eggs, pasture raised
  • 1/2 coconut oil, melted
  • 1 cup almond flour
  • 4 tbsp coconut flour
  • 1/2 tsp Himalayan salt
  • 2 tsp baking powder, aluminum free
  • 1 tbsp fresh thyme, chopped
  • DIRECTIONS
  • Preheat oven to 350F
  • Place all yam, coconut milk and eggs in a large bowl and combine
  • In a seperate bowl combine flours, salt and baking powder, mixing to ensure no lumps
  • Add dry ingredients to wet stirring with a spoon to blend
  • Add coconut oil and thyme
  • With a "muffin" scooper or a generous tablespoon make 12 (ish) mounds of dough on parchment paper lined baking sheet
  • Bake for 25-30 minutes, until starting to brown and firm to touch
  • ENJOY!! And they freeze well
